…I got her birthday present today!
I am so excited! My husband was able to fix my car right away this time…I am so thankful for him (and not just because he knows how to fix a car), so I was able to run my errands today. I had to go to HyVee to get some cream. Do you know what is right across the street?
CVS!
I made a quick run in there for one thing. They have my Mom’s favorite cologne on sale and I had a $3 Q for it. What perfect timing! (Mom doesn’t have internet anymore…so I feel really sneaky telling you this. A couple of weeks ago I would have never done a post like this, she was one of my most loyal readers.

Cookies! I am talking about cookies.
I got this great idea to make chocolate chip cookies in my mini muffin pans. Not a bad idea. Unless you forget to grease the pan! On top of that I cooked them too long, so they were hard as a rock!

Anyone have a good idea on how to use all these cookie crumbs? I have two more pans that are not pictured.
On to the success! I came up with another way to use up some of that FREE Carrot cake mix we got at Dillons a couple of weeks ago.
Spicy Carrot Cookies
- 1 package Duncan Hines Moist Deluxe Decadent Carrot Cake mix
- 1/2 t. ground ginger
- 1/4 t. baking soda
- 1/2 c. hot water
- 1/4 c. molasses
- 2 T. vanilla extract
- In a bowl mix the water, molasses, vanilla, and the package of dried carrots and raisins (from the cake mix). Let sit for 5 minutes.
- Add the cake mix, ginger, and baking soda to the wet mixture and stir well. It will be pretty moist.
- Drop spoonfuls of dough onto a greased cookie sheet.
- Bake for 10-12 minutes in a 375 degree oven.
- Let cool on the pan for 2 minutes; then move to a wire rack to finish cooling.
- Eat and enjoy!!!
This is a delicious, chewy cookie. I think they would be even better with a little cream cheese frosting on the top.

I went to CVS this week not really planning to buy anything. I had the opportunity to take my sister there and give her the CVS low-down. While I was there she found these cute purses. When I realized I could get them for free, I snagged them for her. I am not really into the purse, but I really like the smelly-good stuff, so it was a deal! Plus, I have one happy sister now; another deal!
On a sad note: The Topeka, KS CVS is no longer taking expired CVS coupons. So if you have some coupons in hand that are getting ready to expire, use them soon!

Here is an idea for that little bit of coffee left over in the pot at the end of the day: make ice cubes with it!

You can use these to cool down a very hot cup of coffee with out watering it down.
Or blend a few with some milk or yogurt and sweetener for a coffee flavored smoothie.

Me, go to the mall on a Saturday? I sure did! I almost can’t believe it myself. Well, I really only stepped foot in JCPenny, but that counts, right? Even if it was for only 20 minutes flat…and that was because of all the crowds!
JCPenny recently sent out a coupon for $10 off (they are green). I usually just throw these out because you have to spend so much to get the $10 off, but this time the coupon was $10 off a $10 purchase. Now that is appealing! You can find an assortment of things in a store like that for close to $10.
We roamed a bit and I ended up finding a tie clip that was a Door Buster Sale item regularly $22, on sale for $10.99…used my $10 off coupon and walked out the store paying just $1.06! My children and I have been wanting to get my husband one of these since his birthday last year!

I am so thankful for coupons! I hope you got one of these JCPenny coupons too—don’t throw them out! And if you don’t want it, can I have it?
