Not a whole lot going on at CVS this week, but I did end up finding a couple of interesting items that had been clearance 90% off! When it was all said and done my receipt said I saved $161.98. Wow!!! (For the record, I would have never, ever paid that much for these items, but I think you knew that. Didn’t you?

I don’t know why I hadn’t thought of this before…but a very quick way to “mash” your beans when making refried beans is to use your stick blender. I usually use a potato masher, which can get messy and take a little while to get the consistency you want. Not anymore!

Who doesn’t already have a favorite Chili recipe? But I thought I would post one anyway. The possibilities with Chili are endless! Here is a recipe for a chunky chili that is not too hot, but probably not considered mild. Have fun cooking!

- 1 lb. ground beef (or deer:))
- 1 large onion, chopped or diced (for less chunkiness)
- 1 green pepper, chopped or diced
- 2 14.5 oz cans of diced tomatoes, undrained
- 2 cans of beans, undrained, use your favorite
- 2 8 oz. cans of tomato sauce
- 2 T. chili powder
- 1/2 T. cumin
- 2 t. garlic, minced (I buy this already chopped up in a jar) or 1 t. garlic powder
- 1 t. pepper
- 1 t. oregano
- 1 beef bouillon cube or salt if you prefer
- You can add a little flour or cornstarch to thicken it up if you like
- Brown meat with onion and green pepper; drain grease.
- Add the rest of the ingredients to the pot and stir well.
- Bring to a boil and then lower the heat and let simmer for 20 to 30 minutes. Stir occasionally.
Done! Serve with shredded cheese and sour cream. Eat and enjoy!
This amount of Chili will feed our family of 5 twice. Chili freezes very well, so you could save some for another time or use the extra in another meal.
Here are some more ideas for different uses of Chili:
- Tator Tot casserole, but use the chili (instead of the meat mixture) to top the tator tots and add 2c. of frozen corn, don’t forget the cheese!
- Chili salad, serve a cup of chili over salad greens with your favorite toppings and a few tortilla chips.
- Pizza pockets, use some pizza dough to make little pockets, stuff them with some chili and cheese. Bake at 400 degrees until golden brown.
- Chili Baked potato, serve your chili over a baked potato with your favorite toppings.
- Chili Fries, Serve chili over french fries with melted cheese. Yum!
- Chili Bowl, to help stretch the chili or just for something different, serve it over a cup of rice in a bowl.
- Chili Mac, Stir in some cooked macaroni noodles into your chili a few minutes before serving.
- Chili burritos, mix chili with already cooked rice and roll up the mixture into a tortilla for a burrito.
- Chili Cheese Dip, Melt a block of Velveeta and some chili in a crock pot and use for a very yummy dip with chips.
- Frito pie, Serve chili over a bowl of Fritos and of course don’t forget the cheese!
- Chili omelet, add some chili in the center of your favorite omelet recipe.
Okay, okay, I think you get the point. You can do tons of things with your chili. Of course just eating the chili with a few crackers or a piece of cornbread will be pretty good too!

A childhood favorite of mine. This is a very kid friendly and man pleasing dish! The recipe that follows is basic, use your creativity to make this a family favorite in your home.
- 1 lb ground beef
- 1 onion, chopped
- 1 can of cream soup (your choice); I used cream of mushroom
- 1/2 of the above can filled with milk or water; I used water
- 1 package of frozen veggies (your choice); I used spinach
- 1 1/4 c shredded cheese (your choice); I used sharp cheddar
- 2 t. Worcestershire sauce
- 1/2 t. garlic powder
- 1/4 t. pepper
- bag of frozen tator tots; I used tator rounds
1. Brown ground beef and onion together; drain any grease.
2. Mix in soup, water or milk, veggies, 1 c. of cheese, and seasonings; bring to low boil. (You can add a can of cheese soup instead of the shredded cheese, you will need to increase the liquid a little more.)
3. Pour this mixture into a greased 13X9 baking dish and top with tator tots. Note: You can put the tator tots in the pan first and then pour the beef mixture on top if you prefer.
4. Bake for 30 minutes in a 350 degree oven.
5. Pull out of oven and sprinkle with remaining cheese, return to oven for another 5 minutes. Another great addition here is fried onions from a can.
