Southwest Sloppy Joes

I recently attended a Healthy Cooking Class at Hy-Vee. The Nutritionist, Amber, made four different recipes before us and then we were able to sample them. It was a lot of fun! And now I have a couple more interesting recipes to add to my meal plans. Here is one:

1lb. lean ground beef

¼ c. chopped onion

¾ c. ketchup

½ c. corn

½ c. canned black beans, rinsed, drained

½ c. tomato sauce

½ t. cumin

¼ c. fresh cilantro

¼ t. salt

¼ t. pepper

4 to 6 whole wheat hamburger buns

Brown ground beef with onion in large nonstick skillet over medium heat 8 to 10 minutes or until beef is no longer pink. Drain the grease. Stir in ketchup, corn, beans, tomato sauce and cumin; bring to a boil. Stir in cilantro, salt and pepper. Serve on whole wheat buns.

Thanks to a tip from I friend I found some great deals here today, so I thought I would pass them along to you!

Coupons, coupons, and more…

What do you do with all those lovely coupons you have been accumulating lately?

Here are two ideas:

The first method I used was with an index card box, very similar to the one Crystal has blogged about at Money Saving Mom, take a peek so you can get the basic idea. Instead of envelopes I used the index cards as my separators and I wrote the categories right on the index card. I also had a category for each store that I shopped at so I could put related items there. For instance, in the CVS “file” you would find my Extra Care Card, ecbs, and any exclusive CVS coupons. Having a rebate section is very nice too.

After a while I started having waaaaaaaaaaaaaaay too many coupons for this system and would spend alot of time fumbling through them at the store trying to find the one I needed.

My new method is to use a binder with trading card pages*. I got this idea from Alyssa at Keeping the Kingdom First. Check it out! She even has a little video so you can see it live! The really neat thing, and I hope a time saver, is you can see all your coupons you have at a quick glance. I just changed over today so I will let you know how this method works for me.

*For those wanting to know:  I found these at Office Max, $3.08 for ten sheets, each sheet can hold 9 cards. You can also find them at Wal-mart. They are close to the check out register where they sell cigarettes and trading cards. Each package is a little over $5 for 32 sheets. A far better deal than Office Max!

Dillons’ Mega Event

It looks like there is great potential for some good deals at Dillons this week with their Mega Sale! I found a site where Marcy, at Stretching a Buck, has done up an excellent list of the things on sale and any coupons that you might be able to match up with some of the products. Make sure you stop by there and have a looksy for yourself.

I’ll try to go through my coupons and list any other deals that I come across, time, and the Lord permitting me to do so.

Zucchini And Nanner

Just thought I would share a picture of this huge Zucchini we were given today. Now you know why I decided to make Zucchini Cobbler this week. I also will attempt to make some cookies too…if I have enough zucchini. Ha!Ha!Ha!

***Update: Here is a picture of the Zucchini Cobbler I made. It was pretty good!

Mama’s Stew

Moma\'s Stew with pasta instead of potatoes

This is a recipe that has been handed down from my Mother-in-law (She calls this Poor Man’s Stew). You kind of just toss things in, so adjust things to the way your tastes are, or for what you have on hand.

We really like it around here and it seems to be a meal most people like. It is especially good with a few shakes of hot sauce and a piece of cornbread to go with it.

Fry together:

1lb. ground beef and one onion, chopped

Drain grease and add:

1 14oz. can diced tomatoes

2 8oz. cans tomato sauce

1 can green beans with the liquid

4 or 5 potatoes, cubed

2c. frozen corn

2 to 3c. frozen okra

dash of garlic powder

Salt and pepper to taste

Bring to a boil and simmer, with lid on, until potatoes are tender.

Enjoy!!!
